  1. Is Chocolate Always environmentally responsible?

    Chocolate Always works in partnership with local farmers that supply the ingredients for our bars. We observe and support firsthand the sustainable growing practices that ensure both the continued good health of the fragile Criollo beans, their delicate ecosystem in the foothills of the Andes and the environment in general. We support only bio-diverse farming techniques in line with global initiatives to offset climate concerns and that serve to maintain critical forests and plant life as well as continue to provide habitat for migratory birds and other animal species.

  2. Do you make your own chocolate?

    Yes. We start with the best beans—the finest Criollo beans from Peru. We ferment, roast, grind, refine, conch and temper our cacao to our own specifications and using our special recipe. We use only the simplest, most natural ingredients, and we balance the proportions for the best-tasting and healthiest bars we can make.

  3. Are Chocolate Always bars really healthy?

    Quality chocolate has high percentages of cacao solids (the pure cacao separated from cacao butter) that are full of minerals, flavanols and polyphenols. It’s the superfood that tastes delicious. Cacao is an excellent anti-inflammatory and antioxidant, which is good for the cardiovascular system. It’s also an excellent stress reducer and can even reduce insulin resistance. At Chocolate Always, we never load our chocolate bars with fillers, preservatives or tons of sugar. We DON’T use high fructose corn syrup (HFCS), palm oil, coconut oil, soybean oil or GMO (genetically modified organism) ingredients either. And we never use dutch-processed cocoa powder.

  4. Are Chocolate Always bars organic?

    Yes, we offer all of our flavors in both a Conventional and an Organic bar. Every ingredient in our Organic bars is certified United States Department of Agriculture (USDA) Organic. And both our Conventional and Organic bars use natural ingredients, are GMO-free and contain no high fructose corn syrup.

  5. Is Organic chocolate worth the price?

    Chocolate Always Organic bars cost only slightly more than our Conventional bars. But the value is much greater. All the ingredients are organic. And you can be sure that all ingredients are free of any pesticides or chemical fertilizers, and we use no artificial colors or ingredients. Our Organic bars carry the USDA Organic logo. So you know you’re getting the very best chocolate.

  6. What are chocolate inclusions?

    Inclusions are the aggregate ingredients, such as toffee, almonds, fruit, nuts and coffee, we add to chocolate to create our distinctive bars. While some companies sprinkle their inclusions on the surface of their chocolate, Chocolate Always blends the inclusions throughout the melted chocolate before we pour the mixture into our molds. This way, you get the full taste of our inclusions in every bite.

  7. Are Chocolate Always bars safe for people with wheat/gluten allergies?

    While we do not include wheat or gluten in any of our bars, our factory does produce other products. For this reason, we cannot assure you that our bars are 100% wheat- or gluten-free.

  8. Are Chocolate Always bars nut-free?

    No, some of our chocolate bars have nut inclusions. And because all our bars are made in the same factory, we cannot assure you that any of our bars are 100% nut-free. If you have an allergy to nuts, then our chocolate bars are probably not for you.

  9. Are Chocolate Always bars vegetarian or vegan?

    All of our bars are suitable for vegetarians. And our dark chocolate bars are suitable for vegans. That includes our Almond & Sea Salt Adventure, Coffee Lovers Delight, and our Fruit & Nut Delicacy. Our milk chocolate bars, however, do include milk. If you have any allergies or dietary restrictions, always check the ingredients before eating.

  10. Where does Chocolate Always source its beans?

    We single-source our cacao from the finest Peruvian Criollo beans. We selected Criollo for its superior flavor and smell. Also, Criollo has a naturally low acidity and no astringent after taste, which you can detect in many inferior chocolates. Today’s Criollo is the closest to the original cacao beans cultivated more than 2000 years ago. We also prefer sourcing our beans in Peru because we can work directly with small, independent farmers.

  11. Why does Bean to Bar matter?

    Bean to Bar tells you that Chocolate Always manages every step in our process—from sourcing our cacao beans to making our chocolate with a recipe of our own creation to manufacturing and distributing our bars. We like to say we’re “bean to bar near the source” because we source and produce everything locally. We select only the best beans (chosen for their flavor and low acidity) and grind our mixture very fine (so there’s no grittiness). And we select the best ingredients. Both our Conventional and Organic bars are GMO-free, and we never use high fructose corn syrup.

  12. How much caffeine in your chocolate bars?

    Actually there’s not as much caffeine in a chocolate bar as you might think. A single ounce of dark chocolate contains about 20 mg of caffeine, and 1 ounce of milk chocolate has around 6 mg of caffeine. Compare this with a cup of coffee that has anywhere from 80 to 155 mg of caffeine, and you can see that chocolate has only a small amount of caffeine.

  13. What does the cacao percentage on your wrapper mean?

    The cacao percentage indicates the percentage of cacao solids in our chocolate. Our dark chocolate bars are available in 50%, 55% and 70% cacao solids. Our milk chocolate bars are 33% and 36% cacao solids. The higher the percentage, the darker the chocolate and the less sugar we use. Each label is clearly marked.

  14. Does Chocolate Always offer a sugar-free chocolate bar?

    While we have conventional and organic bars, we do not offer a sugar-free variety. We use all-natural white sugar. No high fructose corn syrup, and no other sugar substitutes. We carefully control the amount of sugar in every bar—just enough to bring out the flavor of our chocolate. And our dark chocolate bars have the least amount of sugar.

  15. What’s the white film on my chocolate?

    The whitish film called “chocolate bloom” is nothing to worry about. It’s simply a cosmetic change that sometimes occurs when chocolate is exposed to changing temperatures—when cacao butter separates from the cacao mass and rises to the surface of the chocolate. That said, while you will seldom see chocolate bloom on a Chocolate Always bar, we can’t control environmental conditions during transport. When chocolate is exposed to temperatures rise above 78° F and then cooled again, chocolate bloom can occur.

  16. What’s the ideal storage and shelf life of your chocolate?

    Chocolate Always bars will stay fresh for many months when stored in a dry, cool place—right around room temperature (65° to 69° F). If you decide to store our chocolate in the refrigerator, we recommend that you enclose it in an air-tight container to keep the chocolate dry. Milk chocolate will remain fresh for between 9 months and a year; dark chocolate a little longer.
